A simple Mushroom saute, my moms way! Mom is not here yet,, but hey we all love our Mom's creations. This dish is a quick throw in for a weeknight or a lazy weekend. Some pre-packed sliced white mushrooms, onions and spices! and there you go.
Mom usually serves it as snack on toasted bread. Make this with finely chopped mushrooms and serve as pate or dip. Add to greens and sprouts for the umami in the salad. Top an olive oil glazed pizza base.. Serve as side with Lentil soup(Daal) and flat bread(Roti). The possibilities are endless. Mushrooms provide great immune support, are a good source of Vit b12 and many vitamins and minerals!

Seen below.. White Mushroom saute on Ciabatta and a bed of spinach. The mushrooms are spicy and saucy by themselves. Use fave dressing if needed.
Serves 2 : Moms version
In a pan, add a Tablespoon of oil.
Add a half a medium onion chopped or sliced.
Cook on low heat for 3-4 minutes until just about translucent.
Add in the chopped white mushrooms or chopped portabello.(about 2 cups)
Mix well and cook covered on low heat for 5 minutes.
Add in salt and red chili powder or cayenne pepper to taste, mix well and cook partially covered until mushrooms are tender. (10-15 minutes)
Variations:
1. Add some garlic powder.
2. Add some cajun spice blend.
3. Add black pepper, thyme and sprinkle lemon juice before serving.
4. Sprinkle olive oil, nutritional yeast and dried basil right before serving.
5. Add garam masala blend for a indian spicy twist.

i love slighty cooked mushrooms. :) i would have loved to participate in vegan mofo, but i just can't blog every day w/ my work schedule! btw, do both you and your hubby eat vegan gluten free?
