What are our plans for the weekend.. hmmm. I think we will be busy planting trees around our yard to keep some privacy and to keep the noise out.
Then maybe unpacking and organizing, then finding staging and photography for our condo. And then maybe grill up some veggies, tempeh and sandwiches. The work is never-ending I say:) The Condo looks fabulous right now with the new paint and carpet.
Today, the builder is fixing our hardwood floor at the bottom floor in the house, which started buckling as soon as we moved in(murphy's law). Probably the sealing between the concrete slab and the floor is leaking moisture.
Any which way, our days are eventful. And I dont even know when I will hit publish on the post :) Started writing it up yesterday night then fell asleep. Now coordinating between all the pending things.

Grilled Sammies!
This Sandwich pictured above, has Roasted red pepper smoky dip from The Great Vegan Bean book, roasted cauliflower, roasted sweet potato slices and greens. Made with my White Sandwich Bread. The smoky cauliflower, sweet potatoes and the sweet pepper dip makes this a keeper. Roast the veggies, whip up the dip and keep ready. Put the bread slices on the grill, layer the veggies and hummus, grill up and serve.
Grilled Smoky Roasted Red pepper hummus or bean dip Sandwich with Roasted Cauliflower Roasted Sweet Potato
Method:
Brush Sweet Potato slices with oil, sprinkle salt and pepper and bake at 425 degrees F for 20 minutes.
Toss cauliflower slices in oil, salt and pepper and bake at 425 degrees F for 25 or more minutes.
Whip up a batch of this Roasted Red pepper Hummus or Smoky Bean dip from Kathy's The Great Vegan Bean book.
Layer greens, roasted veggies and hummus and grill.
Serve hot.
Eat your red, white and greens!

But you can make these BBQ chickpea Tortilla Pizzas into tacos!
Whip up these mini gluten-free pizzas. Bake the thicker bases and keep. Grill, top with grilled veggies and sauces. serve.
