But hey, there is Mango pulp made with Indian Mangoes available easily, and that can be used in several ways! Some of the Canned pulp/purees have a good content of sugar, so check before buying. I used some of my Mango pulp stash to whip up my favorite Lassi with So Delicious's New set of Unsweetened Yogurts. The yogurts work beautifully in this Lassi. Add cardamom or saffron for variations!

A big pitcher of plain or Mango Lassi was served up an hour after lunch on the weekends. The fresh mangoes would be ripe enough that added sweet was never needed.
You can make your own non dairy yogurt too, with any thick non dairy milk. I usually make mine with cashew milk and probiotic powder. Add 1 capsule for 2 cups warmed up (105 degrees F) liquid. Then I just leave the mix to set in my oven. I keep the oven on Bread proof (100 degrees F) for the first few hours. I am planning a post on different options for yogurt, nut, coconut and other milks, adding chia or flax to thicken and so on.

Mango Lassi - Mango Yogurt Smoothie
Allergen Information: Free of Dairy,egg, corn, soy, gluten, grain, refined oil. Can be made nut-free with coconut milk or other non dairy milk.
Serves 2
Ingredients:
1 cup So Delicious Coconut Milk Unsweetened Yogurt
1 cup Mango pulp (1/4 cup more for more mango-ey Lassi) or equivalent cubed ripe Mangoes
1/4 cup So Delicious almond milk or other non dairy milk
1/4 cup chilled water or Ice cubes (less or more for desired Lassi consistency)
a pinch of salt
1 Tablespoon raw sugar or maple (less or more depending on the sweetness of the mango pulp.)
1/2 teaspoon lemon juice
Variations: Add 1/4 tsp cardamom powder, or saffron strands or rose essence or vanilla.
Method:
Blend all the ingredients till sugar. Taste and adjust sugar, add lemon juice and blend again. Serve chilled.

Pili nuts are very healthy and nutritious indeed, being a source of energy, potassium and iron.They also have protein, dietary fiber / fibre, and calcium as well as monounsaturated and polyunsaturated fats. I know they have no cholesterol, no trans fat, and the unsalted ones have no sodium. What is great about the pili nut snack or treat is that they are so crisp, rich, and delicious.
