Check out the Vegan version of Kulfi on my newer post here http://hobbyandmore.blogspot.com/2011/07/kulfi-cashew-almond-oats-ice-cream.html !!
Ingredients:
- 1 can sweetened condensed milk
- 1 can evaporated milk or 2 cups whole milk simmered and reduced to 1 cup
- 1 pinch of saffron strands
- 1/4 tsp cardamom powder
Directions:
- Grease a pan with ghee/butter and cook the 2 cups milk on low heat stirring frequently.
- Once the milk is reduced to about half its original quantity, add the saffron and cardamon and mix well.
- Add the condense milk, and bring the mixture to a boil stirring constantly and scraping the sides.
- Let the mixture cool, then transfer it to small plastic cups and cover the cups with foil.
- I put it all in one big container and covered with foil.
- If you have Popsicle sticks, you can fix them into the cup through the foil.
- Freeze for 6-8 hours.
- Enjoy this indian dessert after a spicy hol meal!
Today was also the second try of blueberry muffins. The recipe is here http://hobbyandmore.blogspot.com/search/label/muffin
I changed a few things to make a bit healthy. I used half all purpose flour and half whole wheat flour. And i reduced the butter and sugar to half the original quantity and added 1/3 cup honey. And i didnt put the crumble topping so it looks more like a cup cake.
